Position: Chef de Partie

Reports to: Executive Chef / Sous Chef / Junior Sous Chef
Tasks / Responsibilities:
- Ensure all opening and closing duties are implemented in accordance with the established standards
- Maintain a clean work section and always observe hygiene and safety standards
- Advise the Sous Chef and Head Chef of any supplies to be ordered
- Carry out mise-en-place and ensure all preparations are arranged neatly and orderly before service
- Prepare staff meals in accordance with the recipes and guidelines given by the Head Chef or Sous Chef including, if necessary, desserts and pastry items
- Help with the preparation of dishes and service for daily events and functions, under the supervision of the Head Chef and Sous Chef
- Assist, when required, with breakfast service and mise-en-place.
- Clean and sanitise kitchen area, fridges and equipment
- Minimise waste by using ingredients following the recipe, checking date labels, and controlling quality
- Be prepared to work on different tasks during the day, shifting quickly from one job to another and remain focused
- Make sure all equipment is used according to instructions, is well-respected and maintained
- To assist both the Cluster Head Chef and the Sous Chef in the day-to-day operations of the department as required, helping also with the supervision and training of junior Chefs
- The Chef de Partie will ensure guest satisfaction by assisting chefs with the preparation of food items, which consistently and effectively reflect COMO standards
Job Requirements:
- Previous experience working in fast paced kitchen
- Willingness to work in a team
- Willing and able to work a variety of shifts including weekends and evenings when required
- At least one year experience as Chef de Partie or Commis in high end restaurant or Hotel
