
Michelin-starred Chef Giovanni Luca di Pirro brings the soul of La Torre to COMO Metropolitan Singapore for a four-day culinary pop-up.

Giovanni Luca di Pirro is Executive Chef at COMO Castello del Nero in Tuscany, encompassing the Michelin-starred La Torre and the al fresco Pavilion. He trained at the Institute Hotelier Malatesta in Rimini and has worked with many of Italy’s best restaurants. He has lived in Tuscany since 1999 and it is under his leadership that La Torre gained – and has maintained – its first Michelin star.
In the heart of Chianti, where sun-drenched vineyards and silvery olive groves blanket the hills, COMO Castello Del Nero stands as a timeless tribute to Tuscan tradition. La Torre, the estate’s Michelin-starred restaurant, is where Chef Giovanni Luca di Pirro crafts menus shaped by the land’s seasonal rhythms – dishes that speak of simplicity, heritage, and the purity of flavour.

This April, Chef di Pirro transports La Torre’s farm-to-table philosophy to COMO Metropolitan Singapore for an exclusive four-day residency. From April 27th to May 4th, guests will experience a curated Tuscan menu, paired with exceptional wines from Antinori and Ornellaia.
For di Pirro, great Italian cuisine begins with fresh and seasonal ingredients. "Technical skill is important, but the secret lies in what you source," he says. Much of La Torre’s produce is harvested from the castle’s own organic gardens – a practice he admires in Singapore, where the fusion of Asian and European influences creates a dynamic playground for chefs.


Highlights from his pop-up menu include Bistecca alla Fiorentina – a majestic T-bone, seared over fire to reveal its depth, handmade agnolotti stuffed with Chianina beef, aged Parmesan and wild cardoncelli mushrooms, delicate Florentine crespelle, and artisanal Tuscan cold cuts. Each course celebrates Tuscany’s terroir – right down to the last decadent bite.
Born into a family of chefs – his father from Abruzzo, where lamb and seafood reign – di Pirro’s earliest memories are of the kitchen’s alchemy. "It’s a special world," he reflects. "Demanding, yes, but simple if you love what you do."
